Healthy Eating is Affordable and Quick

The large food manufacturers and fast food companies have done a great job convincing people that eating healthy is expensive and time consuming. Nothing could be further from the truth. Creating healthy meals at home can be quick, easy, and less expensive than eating out. Generally speaking, if you eat the typical American diet you will eventually need the typical prescriptions or over the counter drugs to address western diseases caused by the western diet.

Good health can’t be found in a prescription bottle but it can be found in your kitchen. The kitchen is a wonderful place for the whole family to gather and participate in meal preparation. 

I visited my local organic market and purchased the following organic ingredients to prepare a fresh salad, roasted sweet potatoes, steamed broccoli, and roasted organic chicken breast.

Meal for 4 people

Home Cooked Version

1 lb organic broccoli $2.99

1.5 lb organic sweet potatoes $2.99

2 organic carrots 50 cents

1/2 lb organic tomatoes $1.50

One small red onion 50 cents

1 organic cucumber $1.5

Your favorite organic greens like spinach or arugula $3.50

16 oz of organic chicken $7.00

Total cost : $20.48

Time preparation

5 minutes to cut potatoes into quarters then drizzle with olive oil and a pinch of salt to roast

5 minutes to cut broccoli into pieces to steam

10 minutes to season chicken with favorite seasoning to roast or pan sear

15 minutes to prepare salad dressed with olive oil and apple cider vinegar

Total preparation time 35 minutes

Fast Food Version

KFC Bucket meal includes: Chicken, mashed potatoes, biscuits, and a salad. None of this is organic and full of unhealthy oils, chemicals, and genetically modified organisms. The chicken was most likely given antibiotics and who knows what else.
